Glucosamine is a nutraceutical sold as a dietary supplement to treat symptoms of osteoarthritis and joint pain. As such, it has been the subject of two recent books, "The Arthritis Cure" and "Maximizing the Arthritis Cure." Glucosamine is currently produced by the acid hydrolysis of chitin, a process limited by poor yields and the availability of raw materials, for example, crab shells.
