Process for mfg amylose from pea material having amylose content in range = 70 - 93 % based on total starch, wherein the pea material is dried & ground to produce a flour; & wherein said flour is mixed with 10-100 mM NaOH as liquid decomposing agent for separation into soluble protein comp & insoluble polysaccharide comp, & the flour is decomposed in stirring action; with - A separation into liquid protein phase & solid phase contg polysaccharide being carried out; - Solid phase being suspended in water - The aq polysaccharide suspension being subjected to at least 2 sifting steps, the first carried out by means of a sieve bend & second step by means of a stream elution apparatus comprising a sieve having a mesh aperture of 50-90 micro-m & an inclination angle of 15-45 degrees, at least one of said sieve having a defined mesh aperture for separating at least one of crude fiber & residual protein - The sieve residue being once more divided into solid phase contg polysaccharide & liquid phase - The solid phase now reduced in protein & contg amylose being subjected to drying step |
