Method for disinfecting a food prodt surface, comprising contacting the surface by spray application of an aq soln contg - Metal chlorite (0.075-0.12%) - Acid (citric acid) having first pKa 2-4.4 to adjust pH of aq soln to 2.2-4.5 - & to maintain the chlorite ion concn in the form of CHLO ROUS ACID < 35% Wherein Acid/Metal chlorite > (first pKa) x (g/l concn of me tal chlorite in aq soln.) With the proviso that when acid is lactic acid, Lactic acid/Me tal chlorite > 5.6 |
