- Hydrating gellan gum in water - Combining said gum with slurry selected from: protein slu rry, carbohydrate slurry, fat slurry to form gellan gum slurry - Combining sufficient quantity of said gellan gum slurry with one or more slurries &/or premixes to result in nutritionally complete liquid formula - Having a caloric content 500-2000 cal./liter & contg suspen ded minerals, vitamins, proteins, carbohydrates & fats suffi cient to allow said compn to be the sole source of nutrition for a human - Contg total solids 10-35% - Said gellan gum is present in formula at concn 10-500 ppm & wherein said formula has a yield stress 0.1-1 dyne/square cm |
